Topping off special meal with rice pudding

Valentine’s Day is one week from today. There is plenty of time to plan a special meal for the one you love. My treat to my sweet this year is riso e latte (rice pudding). Made from scratch and a little labor this Valentine dessert is loaded with flavor and love.

Riso e Latte

(Rice Pudding)

1 cup Arborio rice

2 2/3 cups whole milk

1 fresh vanilla bean, split and seeds scrapes

½ teaspoon salt

3/4 cup plus 1 tablespoon sugar

2/3 cup heavy cream

Bring water to a boil in a medium sauce pan. Add rice and boil for 15 minutes. Drain rice and return it to sauce pan with 2 cups of the milk, 1 cup of water, vanilla bean with seeds and salt.

Bring mixture to a simmer and cook for 10 minutes. Stir in sugar and cook for another 10 minutes. Carefully remove vanilla bean.

Stir in remaining 2/3 cup whole milk and heavy cream. Bring mixture back to a quick simmer then remove from heat. Transfer mixture (in small batches) to a food processor and pulse 5 or 6 times.

Ladle pudding into glass containers, cover tightly and refrigerate for two hours or over night.

Sprinkle chilled rice pudding with some red colored sugar for a Valentine’s presentation.
