Sophisticated Super Bowl appetizer

Itís safe to say there will be plenty of chips, dips and meat at the annual Super Bowl party. Iíll be arriving fashionably late and toting an appetizer with a bit more sophistication, if you will.

Iím bringing a sockeye salmon party log, to smear on crackers. This no-bake appetizer is easy to prepare but tastes (and looks) like you really fussed.

I searched through several of my favorite cook books and finally found what I was looking for in my oldest (and first ever) cook book, Better Homes and Gardens. Go figure.

Sockeye Salmon Party Log

1 - 14.75 oz. can red sockeye salmon (Demings)

1 - 8 oz. bar cream cheese, softened to room temperature

1 tablespoon lemon juice

1 tablespoon finely chopped red onion

1 rounded teaspoon prepared horseradish

1/4 teaspoon salt

1/4 teaspoon liquid smoke

¬Ĺ cup chopped pecans

3 tablespoons chopped fresh parsley

Drain and flake salmon, removing skin (if needed) and little round bones. Combine flaked salmon with cream cheese, lemon juice, onion, horseradish, salt and liquid smoke.

Use a rubber spatula to incorporate ingredients well. Turn mixture into a bowl, cover with plastic wrap (touching mixture) and chill overnight.

Form chilled mixture into 1 large (8- by 2-inch) log or 2 smaller logs. Return to refrigerator for an hour to chill.

Roll logs in pecan parsley mixture and place on a serving platter. Cover and chill until ready to serve.

Serve the sockeye salmon log with crackers or toasted baguette. This flavorful appetizer will make it to the end zone for sure at your super bowl party.
