Peanut butter, yum. Peanut butter on cake, extra yum.

I was recently called upon to bake a birthday cake and decided to venture from the usual (chocolate cake or chocolate frosting). I baked a vanilla cake and made homemade peanut butter frosting. I tucked a layer of fresh sliced strawberries in the middle giving the cake a peanut butter and jelly take.

Peanut Butter Frosting

stick butter, softened

cup spreadable cream cheese

2/3 cup peanut butter

2 cups confectioners sugar

1 tablespoon milk

Use an electric mixer to cream together butter, cream cheese and peanut butter.

Beat in confectioners sugar a bit at a time. Add milk and beat until smooth.

Spread icing over bottom layer of a baked (and cooled) vanilla cake. Arrange fresh sliced strawberries over bottom layer.

Smear some frosting over bottom of top layer and place it over (strawberries) bottom layer. Frost sides and top of cake.

P, b and j fans will delight in the flavor of this not too sweet frosting.

If you don't have fresh strawberries on hand, smear some preserves in between the cake layers.
