End-of-summer salad features watermelon

Just because the calendar says it is Labor Day weekend and the traditional end of summer, the season remains strong for the next several weeks. There is still time to enjoy the foods of the season.

I prepared another cool salad this week that will compliment anything from the grill. The ingredient combination is what caught my eye — watermelon, strawberries and avocado.

Sometimes you just know when something is going to taste really good.

Watermelon & Strawberry Salad

with Avocado

(Mary Ann Esposito)

2 cups cubed ( inch) watermelon (preferably seedless)

2 cups quartered strawberries (hulled)

1 to 2 avocados, peeled and cubed (½ inch)

cup thinly sliced red onion

sprinkle of salt

2 tablespoons extra virgin olive oil

cup crumbled feta cheese

In a large bowl combine watermelon, strawberries, avocado and red onion. Gently toss.

Sprinkle with a touch of salt. Drizzle olive oil over top and toss again. Scatter crumbled feta and serve.

We enjoyed this yummy salad with rib-eye steaks and salmon burgers.

These friendly flavors will appeal to many.
