November 29, 2012 The holiday season is here and it’s a long one this year. Yea!
I’m kicking off the season with a creamy spread made with smoked salmon and cream cheese. Smeared on a cracker or stuffed into a celery stalk, this yummy cream cheese is a perfect party starter. P.S. It’s super easy to prepare.
Smoked Salmon Cream Cheese
1 - 8 oz. block cream cheese, softened to room temperature
4 oz. smoked salmon
2 teaspoons lemon juice
1 teaspoon prepared horseradish
1/4 teaspoon white pepper
1 tablespoon chopped scallions
1 tablespoon capers, drained
Place all ingredients in a food processor and pulse until smooth. Scrape bowl sides with a spatula in between pulses. Store in refrigerator until ready to serve.
Smoked salmon cream cheese carries just enough of a punch from the horseradish and
capers. A flavorful spread for sure.
Serve in celery boats or on crispy crackers.
