Catch a boy with blueberry recipe

Time to buy, freeze and find things to do with the seasons little round blues. I baked some fresh berries this week into a coffee like cake called blueberry boy bait. This a recipe more than 60 years young created by a young gal who thought the cake would send the boys running to her. Go figure.

Blueberry Boy Bait

2 cups flour

1 cup sugar

2 teaspoons baking powder

1/4 teaspoon salt

2/3 cup vegetable oil

1 cup milk

2 large eggs

3 cups fresh blueberries topping

3 tablespoons sugar

1 teaspoon cinnamon

Preheat oven to 350 degrees.

In a large bowl combine flour with sugar, baking powder and salt. Sift together using a fork. Add vegetable oil, milk and eggs and beat with an electric mixer for three minutes, scraping down sides of the bowl.

Pour mixture into a greased 9-by-13-inch bake dish. Distribute blueberries over top of batter, as evenly as possible.

Combine sugar with cinnamon and sprinkle mixture over blueberries. Bake at 350 for 50 minutes, until baked throughout and golden on edges and bottom.

Serve blueberry boy bait as a breakfast treat or warm from the oven topped with vanilla ice cream for a not too sweet dessert.

Packed with fresh blueberries this moist and yummy cake is enough to feed a crowd.
