At last. School is out and the warm weather is here. Celebrate the season with a strawberry-lemonade fizz. A concoction of fresh strawberries, fresh lemon juice and simple syrup topped with club soda. A lighter take on summers favorite beverage.

Strawberry-Lemonade Fizz

8 fresh strawberries, hulled and roughly chopped plus more for garnish

1/4 cup fresh lemon juice

3 tablespoons simple syrup

club soda

Place strawberries and lemon juice in a food processor and pulse until smooth. Stir in simple syrup. Fill two glasses with ice and pour half of mixture into each glass. Top off each glass with club soda and garnish with a fresh strawberry.

To prepare simple syrup bring one cup water to a boil, add one cup of sugar and stir until all of the sugar has dissolved. Remove from heat, cool and store in refrigerator until ready to use.

Simple syrup is a staple in my refrigerator. You'll find many uses for this sweet pourable like lemonade or adult beverages.

Make your strawberry-lemonade fizz however you like. Add more lemon juice if you like tart or more simple syrup if you like sweet. Either way this fizz is a treat.
