Turn this potato dish into a meal

On a recent trip to the salon, my friend and hair stylist, Jim, told me about these awesome potatoes he makes for his family. The dish reminded me of a rosti, a Swedish pancake made from shredded potatoes. Three ingredients with no fuss. Snaps!

Mr. Caruso’s

Baked Rosti

1 package (20-ounce) shredded potatoes

1 cup shredded (not grated) Parmesan cheese

1 cup heavy cream

salt and pepper to taste

chopped fresh parsley (optional)

Preheat oven to 350 degrees. In a large bowl combine potatoes with the cheese and heavy cream. Season to taste with salt and pepper, keeping in mind cheese will lend a saltiness to potatoes.

Turn mixture into a greased 9-inch pie plate. Bake for 1 hour or longer, depending on the oven and how golden you like your potatoes.

Cool slightly then cut into wedges and serve.

Crispy on the outside and creamy on the inside best describes these yummy potatoes that fit into breakfast (with a fried egg), lunch (with a salad), or dinner (with a steak).

You’ll make them once and then you’ll make them again. Jim’s potatoes are really, really good.
